cosmos and soup on my brain

i made curried butternut squash today and was surprised that it was so easy.
i put yogurt in it too (when i ladled it into my mug) because it's delicious to do so and because i do what i want. here's the recipe:
  • 1 tablespoon olive oil
  • 1 medium onion, chopped (about 2 cups)
  • 2 cloves garlic, minced
  • 1 (2 1/2-pound) butternut squash, peeled, seeded and cut into 1-inch cubes
  • 5-6 cups low-sodium chicken broth or vegetable broth
  • 1 tablespoon plus 2 teaspoons curry powder
  • 1/2 teaspoon salt, plus more, to taste
  • 2 tablespoons honey 
  • 3 lil bay leaves 
  • a pinch of fresh chopped ginger root, a small thumb size
 heat up the oil, garlic, and onion until they get a little soft, then add the butternut squash, curry powder and everything else. cover and let it boil for a bit. when the squash gets soft (about 15 minutes into the boiling) turn off the heat, remove the bay leaves, and pour it into a blender. blend. when you pour it back into the pot i recommend grinding in a little pepper and a sprinkle or two more of salt, it brings out the flavor a little more.  hooray, instant winter soup that is good for you!

  1. mmmmm yummy, yummy, yummy! Butternut squash soup is one of my staples. It is so easy and it always tastes wonderful, it tends to disappear because everyone wants some. I'm vegan so my recipe doesn't include honey or yogurt, but sometimes if I'm lacking enough vegetable broth I'll add in some rice or soy milk. So delicious! xxxx
